Eat Like a Yogi: Iced Vanilla Bean Matcha Latte

Cool off and lighten up with this delicious, chilled summer latte. Not only will this drink take your temperature down a few notches, it is packed full of superfood nutrition. Matcha tea is whole green tea leaves pulverized into a fine powder. For this drink, whirl the match and non-dairy milk together. Add a little vanilla and sweetener, and voila! You have a perfect summertime drink that packs serious health benefits. Though matcha's caffeine content is high, it is known for awakening the mind without over stimulation of the body. In fact, Zen Buddhist monks have been drinking matcha for thousands of years because it induces a "calm alertness."

2 almond milk ice cubes (60 mL), plus more for serving
1 cup (250 mL) unsweetened almond or coconut milk
1 teaspoon matcha green tea powder
1/4 teaspoon vanilla bean powder or 1 vanilla bean*, seeded
2 teaspoons pure maple syrup, or to taste
1 to 2 frozen wheatgrass cube(s)** (optional)
For serving: Coconut Whipped Cream, matcha powder (optional)

1. Pour almond milk into an ice cube tray and freeze until solid. Using a silicone mold will make popping the ice cubes out easier. If you opt for the wheatgrass, pour the wheatgrass shots into a separate mold and freeze.

2. To make the latte: Add the cup of almond milk into a blender along with 2 almond milk ice cubes, matcha powder, vanilla, maple syrup, and the optional frozen wheatgrass cube(s). Blend on high for around 20 seconds to ensure it gets nice and frothy.

3. Pour into a glass, along with more almond milk ice cubes. You can also add a spoonful of coconut whipped cream and a sprinkle of Matcha on top to make it ultra fancy-pants!
