Recipe of the Month - Summertime Key Lime Tartlets

During the intense heat of summer, our bodies naturally crave sweet and cooling foods. For our recent Ayurvedic workshop, exploring ways to pacify the Pitta dosha, our awesome instructor Kristen whipped up some delicious key lime tartlets bursting with flavorful nutrition. For Crust
1 cup pitted medjool dates (soaked in warm water for 10 minutes and drained)
1 cup almond meal

*Process ingredients in food processor until a loose dough forms and then side aside.

For Filling
1 cup almond meal or cashew meal
1 large lime (juiced)
1/3 cup coconut oil
1 container coconut milk yogurt (greek style)
1/2 cup local raw honey

*Blend all filling ingredients in a blender until completely smooth and refrigerate for at least 2 hours.


1. Grease a mini muffin tin with coconut oil. 
2. Press a small amount of crust into the bottom of each muffin tin.
3. Add filling

Finishing Touch:

For an extra burst of flavor, add fresh seasonal fruit on top or layer between the crust and filling!
